The Bread Matters Sourdough Starter is rye flour and water in which naturally-occurring yeasts and bacteria have developed and been nurtured over quite a few years. Wholemeal rye flour is especially rich in these micro-organisms, which is why, if you want to maintain only one sourdough starter, it makes sense to make that a rye one.

Our Organic Rice & Sunflower Bread is traditionally made in Germany by organic bakers and perfect as part of a gluten free diet. Produced in a dedicated gluten free bakery and routinely batch tested for gluten.

Pumpernickel is made by grinding the whole rye berry and baking it very slowly until it caramelizes. This is what gives this bread its distinctive sweet flavour and colour.
